The soil is clayey and of medium texture. There is a limestone layer at a depth of around 80 cm, which is responsible for the typical mineral note of the characteristic wines I Production: The vines are trellised and harvested by hand in September in ventilated crates holding around 20 kg. Selection in the vineyard, gentle pressing of the grapes. Fermentation with maceration takes place in thermo-conditioned steel tanks with frequent pumping over; six months resting time in steel tanks. After malolactic fermentation, filtration and bottling followed by a further two months of maturation in the bottle.
