The soil is clayey and of medium texture. There is a limestone layer at a depth of around 80 cm, which is responsible for the mineral note so typical of the characteristic wines I Production: The vines are trellised and harvested by hand in the second decade of September in ventilated crates holding around 20 kg. Selection in the vineyard, gentle pressing of the grapes; 12 hours after the start of maceration, the must is drawn off and fermented at 16-18°C. Maturation for two months in INOX steel tanks at a controlled temperature; filtering and bottling. Further maturation for at least 2 months in the bottle. Only 2.1 g/l residual sugar, total acidity: 6.0g/l I Description: Bright pink with accentuated violet reflections; fruity and floral on the nose; round on the palate with a beautiful triad of fruit, freshness and present acidity I Drinking temperature: 10 - 12°C I Gastronomic recommendation: Lively as an aperitif, with seafood starters, light soups, baked fish, white meat, summer pasta dishes and pizza I Stopper: Natural cork I Vegan: yes
